Today I want to share an easy and versatile recipe with you: Onion and potato schiacciata with rosmery.

INGREDIENTS

  • 1 potato

  • 1 onion

  • 50 olive oil

  • 350 ml water

  • 200 flour

  • 1 tsp salt

  • 1 sprig rosemary

HOW TO MAKE IT

  1. Slice the potato and the onion into rings with the help of a mandolin.

  2. In a bowl mix together oil, water and salt. Add the flour carefully sifted and mix until obtain a batter with no lumps.

  3. Add the potato and the onion thinly sliced and spread with rosemary.

  4. Cover the oven tray with baking paper and pour the batter onto it.

  5. Preheat the oven at 200°C and then bake your schiacciata for about 40 minutes at 180°C.
